Our Local Experts say:
Hong Kong is a land surrounded with sea. Therefore, it is just right that they take advantage of its treasures. Making dried seafood is a result of a Chinese practice to dry foods to keep these in good condition while being transported to places.
Aside from seafood, poultries, mushrooms, herbs and Chinese medicines are also dried. Dried foods are usually salty and taste a lot different compared to the fresh ones. Some of the dried foods are very expensive, maybe because of the long process it took to make it. The most famous dried seafood market for locals is located in Sheung Wan where there are more than 200 shops. Here you can find the biggest shark's fin, oldest Chinese ginseng, priceless dried abalone, and famous Chinese dried sausages.
